Camping Recipe: Campfire Nachos

Camping with your family is sure to be an outdoor adventure that will help you make memories that will last a lifetime. When you plan a camping trip, you must be sure that you think ahead of time about what kind of food you will prepare on the campsite. This campfire nachos recipe is easy to make with your loved ones around the fire.

  • 1 11-ounce bag of tortilla chips
  • 1 1/2 cups of shredded Mexican blend cheese
  • 1 15-ounce can of pinto beans, drained
  • 1 15-ounce can whole kernel sweet corn, drained
  • 1 4-ounce can of diced green chiles
  • 1 11-ounce can of pickled jalapeño slices
  • 1/2 cup of queso fresco or cotija cheese
  • 1 avocado
  • Sour cream 
  • green onions
  • cilantro
  • radishes

Directions

  1. Prepare your cooking area by placing a grate over the campfire. 
  2. Thinly slice green onions and radishes.
  3. Chop some cilantro and dice one avocado.
  4. Place about half the tortilla chips in a large cast iron skillet, then sprinkle them with ½ cup of shredded cheese. 
  5. Add 1⁄3 of the beans, 1⁄3 of the corn, and 1⁄3 of the diced green chiles. 
  6. Repeat these steps two more times.
  7. Top everything with the jalapeño slices.
  8. Loosely cover the skillet with foil and cook over the campfire until the cheese is melted or for about 5 to 10 minutes. 
  9. Serve and top as you please with avocado, cilantro, and sour cream.
